I was watching a video on vinyasa yoga and a the start the girl said we would be practicing a form of breathing out of the nose, but i am not sure if i should be doing that the whole time i am doing the vinyasa poses cat cow , down dog, plank etc…

Of course, you don’t “have to” do anything; instead, as with many things, it’s about what is most effective, beneficial, or works best for you.
That said, I would say for almost all people, it’s most beneficial to consistently breathe through nose (both inhale and exhale) during your entire asana practice (vinyasa or not).
Nose breathing acts as a regulator, preventing you from working too hard.
If you are working so hard you feel the need to breath through the mouth, you should back off a bit, until your respiratory capacity increases enough to enable you to work at that intensity while only nose breathing.
There are many benefits to consistent nose breathing.
